
Restaurant Texture
Restaurant Texture has achieved a Michelin star in less than a year, a feat fuelled by strong personal stories, French roots and culinary precision.
Restaurant Texture on Sølvgade in Copenhagen has been awarded its first Michelin star - just eight months after opening. The restaurant was created by French chef Karim Khouani, who previously ran Michelin-starred restaurants in Malmö. With Texture, he has now achieved the same honour in Denmark.
The cuisine is based on classic French craftsmanship and memories from Khouani's childhood in Marseille, with local produce and luxury ingredients such as caviar, truffles and shellfish. The name, Texture, refers both to gastronomy and to something very personal. Khouani's son is autistic and has a special attention to textures, both in food and surroundings, and the restaurant is inspired by his sensory way of experiencing the world.
The restaurant's head chef, Erin Sykes, is now Denmark's only female Michelin-starred chef. Originally from the US and a mother of two, she emphasises that it is possible to run a top restaurant and have a family life at the same time - when the conditions are right.
Texture has only six tables and emphasises a calm, attentive and relaxed dining experience. According to restaurant manager and co-owner Albert Dalum, it's this intimacy that makes the place special - and even with a Michelin star under their belt, they're not about to change that.
