In Copenhagen’s cool Nordvest district, you’ll find Goose Deli – a place where high-quality, flavourful ingredients are fermented and baked, and where delicious sandwiches are assembled with great care. The kitchen draws inspiration from China, Denmark, and the USA, and you can taste it in every dish: beautiful plates and freshly baked goods full of character and personality. At Goose Deli, you can enjoy both breakfast and lunch in relaxed surroundings that radiate classic deli atmosphere. As you step inside, you’ll be greeted by a tiled space with steel and wooden details.
If you can’t get enough of Goose Deli’s flavours, you can also bring their homemade fermented delicacies, bread, and coffee home with you. Behind the deli stands the duo Lan-xin Foo and Baijie Curdt-Christiansen, who manage the entire production themselves – both the food served in the deli and the goods you can buy to take home. Baijie Curdt-Christiansen is responsible for the delicious baked goods, while Lan-xin Foo specialises in fermentation. At Goose Deli, you can even taste Denmark’s first locally produced soy sauce, developed in the deli’s own kitchen in a large oak barrel imported from Portugal. The fermentation process for this unique soy sauce takes a full year.
The name Goose was chosen because the duo behind the deli consider themselves true global citizens – bringing their international experience with them to Nordvest. The goose, after which the deli is named, is the perfect symbol: a flying world citizen that crosses borders, just like the ideas and flavours from different countries that come together at Goose Deli.
