With a focus on organic ingredients, sustainability and seasonal produce, the concept changes throughout the week, giving you three different reasons to stop by.

Thursday is all about community. Long tables are set for an informal communal dinner, bringing neighbours, friends and families together over a meal made from scratch. The menu changes weekly and takes inspiration from the warmth and flavours of the Mediterranean.

On Fridays, Birks turns into a food and wine bar. From 17:00, ease into the weekend with shareable small plates and a selection of Mediterranean wines in a relaxed and lively setting. The menu follows the seasons, with quality ingredients at its heart.

Then there’s Det Lille Bageri. From Thursday to Sunday, the bakery fills Birks with the smell of freshly baked sourdough bread and pastries. Flour comes from Kornby Mølle and dairy from Thise Mejeri, with a focus on organic ingredients and traditional craftsmanship. Look out for everything from crisp pain au chocolat to cardamom buns. Opening hours vary depending on the day, so make sure to check before visiting.

Whether you come for dinner around the communal table, Friday wine and small plates or freshly baked bread and pastries, Birks i Brede is built around good food, warm hospitality and bringing people together.
