Tír Bakery on Store Kongensgade in the inner city is the latest addition to Copenhagen's bakery elite. The bakery was started by the former Noma chef from Ireland, Louise Bannon.
At Tír Bakery they bake biodynamic and organic sourdough bread and if the name sounds familiar, it's probably because you’ve heard about Tír’s small and cozy bakery on a farm in Sjællands Odde. Owner and founder Louise Bannon is Irish and the name Tír refers to land and region in the local dialect where she’s from. Tír Bakery focuses on the use of good and local ingredients and flour. Therefore, the flour used comes from different farms in North and West Zealand. The bakery is open from Tuesday to Saturday and closes when they’re sold out.
