Once upon a time Nimb was the jewel in the crown amongst Tivoli's restaurants. Following a major refurbishment it will re-open in the shape of a gastronomic palace of unprecedented dimensions on May 1st 2008. For the first time in history there will be a hotel in the heart of Tivoli gardens.
No expense will be spared in transforming Nimb into a luxury hotel offering casual dining, gourmet restaurant, bar, vinoteque, grill-bar, dairy, chocolate factory, meeting rooms and conference & banqueting facilities.
NIMB's famous facade in Maurice style with towers and spires will be brought back to its original look, a complicated craft carried out by experts from Italy. An open glass facade will replace the present closed façade towards Bernstorffsgade and Copenhagen's Central Station so that passing pedestrians can follow the production.
The house's gourmet venture is called "Nimb Herman" and will be under the control of the Danish chef Thomas Herman, who belongs to the absolute elite among Danish chefs. Thomas' brand is refinement and rethinking of traditional Danish dishes such as pork loin, "brændende kærlighed" and "forlorn hare". The Nimb complex will also feature a restaurant with more family friendly prices "Restaurant Nimb", where quality is still a priority and where the interior is designed so that guests will be able to watch the cooking. The preparation of the food has simply been moved into the restaurant, so there is no longer one big kitchen but rather a number of small ones.
NIMB will feature meeting facilities for 20 respectively 80 people and a well-stocked Vinotek with room for events for up to 100 people. "Hotel Nimb" will consist of 13 suites with views over the historic gardens. All rooms will be individually designed with open fire places and antique furniture.
