The Nordic kitchen gains new territory


The newly awarded 10th best restaurant in the world, Noma, has launched a unique gastronomic co-operation with Dragsholm Castle.

Dragsholm Castle - one of Denmark's oldest functioning castles - and the two-Michelin-starred Restaurant Noma has entered into a co-operation to extend people's knowledge of the culinary delights of the Nordic gastronomy, and develop an independent original kitchen profile for the castle's restaurant. The kitchen develops the monthly changing menu starting from the seasons' harvest of the fresh vegetables from Lammefjorden.

The director of Dragsholm Castle, Mads Bøttger, says:
- We want to develop a unique and cultural distinctive mark on Dragsholm Castle, where we combine history with the modern expression. In this connection it seemed natural to develop new thinking on our gastronomic profile, and situated in Lammefjorden, where some of the best vegetables in Denmark are grown, it was an obvious pleasure to make a clear-cut aim at the Nordic kitchen.

Noma's kitchen garden

Dragsholm Castle, which can trace its history back to 1215, is situated at Lammefjorden, whose vegetables are famous and with very good reason. Lammefjorden is the frequent supplier of vegetables to Copenhagen's numerous Michelin restaurants, and Dragsholm Castle almost gets status as Noma's kitchen garden.

From Noma to Dragsholm Castle

The former sous-chef at Noma, Claus Henriksen, takes up the position as the new kitchen chef at Dragsholm Castle. The Nordic kitchen and the excellent wild foods that grow in this part of the world have gained serious attention, with Restaurant Noma's regeneration of lost Nordic traditions. Noma has set a fashion for the new Nordic kitchen, and has been awarded for the effort with two stars in the Michelin guide and an election as the 10th best restaurant in the world by Restaurant Magazine.
