Copenhagen's first raw food bar. Raw food is not only, as the name suggests, raw food. Preparation is also a part of the food, but is only heated to a maximum of 42 degrees - hence the bar's name. In this way retain maximum food vitamins and enzymes. Enzymes are catalysts for a myriad of important body processes, and has among other things affect how and when these processes go on. Vacuum Dehydrator The raw-bar in Pilestraede has no oven or stove. In exchange, the owner bought a series of so called Dehydrators, where you can cook food. In the Dehydrator the raw-bar makes its banana pancakes without milk and flour - as raw food is both vegetarian (no meat) and vegan (no animal products.) Vacuum is also used for cooking - a method, that some gourmet restaurants uses for long-cooking meat.Also coffee latte on the menu The menu comprises 11 salads served on a bed of baby spinach leaves, which have a high content of iron, and salad from the open air, there is less CO 2-burdensome than lettuce from the greenhouse. The ingredients are as far as possible seasonal local produce. Salads are lightweight and usually contains red quinoa, which has a special high protein content. There are exceptions to the 42 degrees, so you can get a coffee latte in 42 Raw. It is made from almond milk.
